Country Gravy

Ingredients

2 Tbsp butter
4 oz breakfast sausage
2 strips bacon
½ cup chopped green onions
⅓ cup packed all-purpose flour
salt and pepper to taste
cayenne to taste
2½ cups milk, more or less as needed

Directions

Remove casing from sausage if necessary then slice bacon into ½-inch pieces. In a saucepan over medium heat, melt butter then add bacon and sausage. Break up sausage into small pieces and continue cooking until the bacon is almost crisp, stirring often.

Finely chop the white part of green onions then add to the pot. Add flour and stir to create a roux. Cook for 2-3 minutes, stirring constantly. Slowly whisk in milk then bring to a simmer over medium-high heat. Add cayenne, salt, and pepper then stir to combine. Reduce heat to medium-low and simmer for 10 to 15 minutes. Taste for seasoning and serve.
