Southern Ham and Brown Beans

Ingredients

1 lb dry pinto beans
7 cups chicken stock
1 (8-12oz) ham steak, diced
1 large onion, chopped
2 cloves garlic, minced
1 tsp chili powder
1 tsp salt, or to taste
¼ tsp ground black pepper, or to taste

Directions

Quick-soak beans in 8 cups of cold water by bringing to a boil then cooking for five minutes. Cover and remove from heat, allow to sit for one hour. Drain.

Add chicken stock, onion, garlic, chili powder, and pepper to the pot of beans. Bring to a gentle simmer over medium-low heat and cook for 1 hour. Add diced ham steak then continue cooking until beans are tender, about another hour. 

Adjust seasonings to taste.
