Ingredients
2 lb (about 4 cups) blueberries
2 ⅔ Tbsp lemon juice
⅓ cup water
4⅔ cups sugar
5¼ Tbsp Ball RealFruit Classic Pectin
½ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground allspice
Directions
Rinse blueberries, process through a food mill, then pour into a large pot (8qt). Carefully measure sugar into a large bowl. Mix pectin with ¼ cup of the sugar in a separate bowl Add the pectin, lemon juice, and water to the berries. Heat on high, stirring constantly, until mixture comes to a full boil. Add sugar all at once, stirring.
Bring mixture back to a full hard boil, stirring constantly, and boil for 1 minute. Remove from heat and ladle into clean, hot half-pint jars, leaving ¼ inch space at the top. Wipe the rim of the jar and put canning lids and rings on fingertip tight.
Place in canner with very hot water, make sure water is 1 inch above jars. Bring to a gentle boil and process in water bath canner for 10 minutes. Turn off heat and allow to rest for 5 minutes in canner.
Remove jars and set them upright on a towel to set for 12 hours.
